Recipe for National Noodle Day, Oct 6th

WHAT?!  National Noodle Day!  Finally people are speaking our language!
 
Noodles = Macaroni, right? Well, you might think that the difference between macaroni and noodle is the shape, but, alas, no. Macaroni is a pasta and pastas have the base of water and flour while noodles must also contain eggs yolk or eggs.
 
So, noodles and macaroni are not technically the same, but we love noodles, too...and so do our little ones!  Share one of our favorite recipes with your family and let us know how it goes over!
 
Chicken and Noodle Stir Fry

 
Ingredients
1 (16 ounce) package egg noodles
2 teaspoon canola oil
2 teaspoon sesame oil
2 clove garlic, minced
2 skinless, boneless chicken breast half - cut into bite-size pieces
2 tablespoon grated fresh ginger
4 leaves bok choy, diced
½ cup chicken broth
2 tablespoon soy sauce
3 tablespoons hoisin sauce
¼ teaspoon salt (to taste as soy sauce is salty)
3 green onions, minced


Cooking Directions
Boil water and cook noodles until al dente. Drain.
In a large nonstick skillet heat canola and sesame oil over medium heat. Stir in garlic and chopped chicken, and cook until chicken browns. Stir in ginger, bok choy, chicken stock, soy sauce, and hoisin sauce. Reduce heat, and continue cooking for 10 minutes.
Toss pasta with chicken mixture until well coated. Season with salt. Serve warm sprinkled with minced green onions.


Cooking Time: 30 min.
